SERVING SUGGESTION: If you’re serving more than four people, cut the corn from the cob over a large serving bowl, then slide the veggies off the skewers and into the bowl, setting aside the lemon wedges. Add ½ cup chopped cilantro and ground black pepper to taste. Squeeze the juice of ½ lemon over it, toss, and serve as a side dish garnished with a few of the reserved lemon wedges. Serve the shrimp skewers on a serving plate.
